Curcumin [1,7-bis(4-hydroxy-3-methoxyphenyl)-1,6-heptadiene-3,5-dione], also called diferuloylmethane, was the main natural polyphenol found in the rhizome ofCurcuma longa(turmeric) and in others Curcuma spp. Curcumin was firstly biotransformed to dihydrocurcumin and tetrahydrocurcumin by reductases and they were then transformed into monoglucuronide conjugates such as dihydrocurcumin-glucuronide and tetrahydrocurcumin-glucuronide by β-glucuronidase [1].
